Sweet peppers, harvested and deseeded by hand, salted, air-dried, and cooked into a deep crimson paste.
In-season tomatoes, hand-selected and cooked down with salt — nothing else.
Whole young figs from Antakya, quick-pickled, then cooked and preserved in a clove-spiced syrup that keeps their shape and gentle crunch.
The same Karakılçık wheat, cracked fine.
