Pastes
Turkish cooking starts in the pan, with a spoonful of paste in hot oil. Both of ours are made once a year by growers near Antakya, at the peak of the crop: tomatoes cooked down with salt, and sweet peppers deseeded by hand, salted, air-dried, and cooked to a deep crimson. Two ingredients each — nothing else in the jar.
